We have a special soft spot for quince, a very Victorian fruit with a unique aroma. Its flesh turns from white to a deep ruby red as it cooks, producing the most incredible jam. At once familiar and exotic, try it on toast, bake it in a pastry or add it to your favourite cheese plate. It’s really something quite special.
